Buffalo Cauliflower Wings

Super Bowl Sunday; a day of binge eating and watching subpar commercials with a musical break at halftime (and hating yourself come Monday morning). Am I right, or am I right?

I’ve been meaning to take a stab at homemade buffalo cauliflower wings for quite some time, last weekend seemed like a no brainer! I haven’t eaten wings in over 15 (!!!) years, but every time a plate passes me at our local wing joint, my stomach yearns for the spicy treat! 

Ingredients:

  • 1 head cauliflower
  • ¾ cup flour
  • ¾ cup milk, or a milk alternative (I used almond milk)
  • 1 teaspoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup buffalo sauce, or hot sauce
  • 2 tablespoons coconut oil, or vegetable oil
  • 1 tablespoon honey (can substitute for a bee-free honey or agave to make it vegan!)

Preparation:

  1. Preheat oven to 450˚F.
  2. Break the head of cauliflower into florets, about 1½-inch  wide.
  3. In a large mixing bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.
  4. Add the cauliflower florets to the batter, making sure each piece is evenly coated.
  5. Transfer to a parchment lined baking sheet.
  6. Bake for 20 minutes, flipping halfway.
  7. In a small mixing bowl, combine the hot sauce, vegetable oil, and honey, and stir until evenly combined.
  8. Brush the hot sauce mixture on cauliflower and bake for an additional 20 minutes.
  9. Enjoy!

I was so happy with how this recipe turned out, the wings were full of flavor! Next time I would cook them a few minutes longer (or broil them for a few minutes) to crisp up the batter a bit more. I always get sucked into Tasty's videos online, I was pleasantly surprised with how this turned out and can't wait to try another!
