Mediterranean Quinoa Bowls

When I came across a recipe for Mediterranean quinoa bowls with a homemade roasted red pepper sauce I had to give it a try! This recipe is quick, filling, and addictive! One of the things that I absolutely love about this recipe is that you can really make it your own by mixing and matching different toppings based on your taste or mood (or whatever you have left in your fridge/cabinets, lets be real 😉).

Ingredients for the roasted red pepper sauce:

  • 12 oz. jar of roasted red peppers, drained

  • 1 clove of garlic

  • ⅓ cup of almonds

  • salt and pepper to taste

  • splash of olive oil

Ingredient suggestions for the bowls (build your own bowl based on preference):

  • cooked quinoa

  • feta cheese

  • cucumber

  • red onion

  • tomato

  • chickpeas

  • spinach or kale

  • basil or parsley

  • kalamata olives

  • pepperoncini

  • avocado

  • hummus

Preparation (for 4-5 bowls):

  1. Cook quinoa according to the package directions (I use 2 cooked cups for this recipe)

  2. Wash and prep any desired veggies or herbs

  3. Pulse all of the ingredients for the sauce in a food processor or blender - the sauce should be thick and textured

  4. Build your bowl - start with a base of quinoa, add any toppings you’d like

  5. If you’re not going to be eating the bowls right away, be sure to store the sauce in a separate container so that the other ingredients don’t get soggy

  6. Enjoy!
