Watermelon Treats

Lets talk about the absolute cutest summer treats! I was headed to a bbq recently and wanted to bring something fun that wasn't the typical cookies, brownies, cupcakes or the flag made out of fruit skewers. I decided on these super cute watermelon rice krispie treats! I made an adapted version of the recipe found here. 

At first glance these looked like they would have been super quick and easy to make, especially for someone who thoroughly enjoys baking! As with most things, I quickly found that wasn't the case. You guys, this was the stickiest, most frustrating thing I've ever made! I'm not sure if it was because I opted to use vegan marshmallows instead of the regular ones, but it was a mess. But a cute mess - because they turned out great! 

The recipe noted that you could use watermelon flavoring in them, but I wanted to stick with the classic rice krispie treat taste and decided to skip it. After they were done, I also opted out of using the popsicle sticks in them. I loved the circular look and didn't want the sticks to interfere with the aesthetic.
